If I had to name some of my favorite varieties of coffee, Pink Bourbon would certainly be one of the tops. Soooo… why haven’t we released a Pink Bourbon lot yet?! Idk, crazy times? Regardless, we finally shook ourselves back to reality and have an absolutely excellent representation of just why this variety slaps so hard. Introducing Luz Helana Salazar’s washed lot of Pink Bourbon.

Luz grew up in the city of Armenia which sits in the Quindio Department of Colombia and has been producing coffee for 20 years. Her farm, Maracay, is 8-hectare (just shy of 20 acres) and sits at 1450 MASL. Luz’s children Carlos and Felipe, are the co-founders of Cofinet who are producing and importing some of the best coffees I’ve tasted this year. Luz’s husband Jairo also is a producer and dry mill manager for Cofinet and inspired Luz to be more involved in the industry and to start growing coffee herself. Now, Luz is producing some incredible and unique coffees and is growing a range of varieties on Maracay. She has her own take on the Washed process which gives her lots a dynamic sweetness and slightly fully body, while maintaining a sparkling acidity… it’s wild.

This 100% Pink Bourbon lot is harvested using strict ripeness criteria, floated and hand-sorted to remove any defects. Cherries were then exposed to a 30 hour water fermentation before being pulped then washed and dried in temperature controlled conditions until the ideal moisture content was reached.

You can expect a complex, sweet, bright, and impressive cup. Luz’s coffee possesses all the attributes of Pink Bourbon that get me hyped… sparkling citric acidity, soft florals, stone fruits and a lasting fruity sweetness. I’m getting whacked with a bright limeade-like acidity. This sugar-laden lime note is accompanied by ripe pomelo and as the cup starts to cool, the acidity turns more white grape-like with backing peach notes and finishes fresh with florals a la chamomile.
